bibingka-style pancakes with ube creme anglaise

This dish is the star of our brunch menu and is inspired by Chef Ethan’s mom. She would make pancakes for him and his sister on special weekends. These pancakes are also a twist on a family bibingka recipe so unlike regular flapjacks, these will be light and fluffy with a slight chew. The ube creme anglaise is a pouring custard that takes these pancakes to another level.
